Our Spirits

We are, in our hearts, minds, and daily practices, brandy makers. Everything we do is with the aim of making exceptional brandy. This requires time, lots of time. We relish this slow passage of time and the deep aging of the brandies in our chai.

We are also innovators, collaborators, and community members. We grow our own fruit, but we are also surrounded by abundant, seasonal fruit in New York. The first step in Brandy making, after fermentation, is distillation. This fruit distillate is Eau de Vie. We are aging the Eau de Vie we make in our our alembic still from our fruit to become Klocke Brandy. We also have a Muller column still from Germany which is specifically designed to make Eau de Vie. We are using this still to make Eau de Vie from a range of fruit. As of July, 2024, we are starting with cherries!

To take our wine-making farther, we are making Vermouth. We have studied and experimented, and will continue to develop these expressions. Our Vermouths will be released under the Brevis brand. We are also collaborating with the mixologists at our bar, which is a mere fifteen feet from our distillery. We are collaborating with them on ready-to-pour cocktails, to be released under the Flyback brand. Flyback is the seconds hand on a stop watch.

Years, months, days, hours, minutes, seconds. We savor and celebrate the nature of time!
