The Estate and Distillery

We are growing forty-three varieties of apples and nine grapes varietals which we specifically chose and cultivated to make exceptional brandy.

We contracted with a leading still maker in Cognac to construct our custom-designed, hand-hammered, copper Alembic Charentais still.

Using local trees we worked with local craftsmen, with their own sawmill, to construct a timber-framed, post-and-beam barrel-aging barn known as a “chai” (pronounced, “shay”) in France.

Brandy

The Dutch brought brandy making to New York hundreds of years ago, at that time called, “Brandewijn.” “Klocke” is the Middle Dutch word for “clock.” At the heart of our company is the celebration of time. We are distilling our wine and cider and aging it to then release it over many years, as a reflection of time.
