We use sustainable, organic, and regenerative agricultural practices to enrich the land and grow the best apples and grapes for making brandy.

The Estate and Distillery

We are growing forty-three varietals of apples and nine varietals of grapes which we specifically chose and cultivated to make exceptional brandy. We contracted with a leading still maker from Cognac, imported the still, and worked with them to construct our copper alembic Charentais still. We hired local builders to construct a traditional barrel-aging barn known as a “chai,” (pronounced, “shay”).

Brandy

The Dutch brought brandy making to New York hundreds of years ago, at that time called, “Brandewijn.” “Klocke” is the Middle Dutch word for “clock.” At the heart of our company is the celebration of time. We are distilling our wine and cider and aging it to then release it over many years, as a reflection of time.
